About the Winemaking
At the helm of Cobble Hill's cellar is winemaker Dylan Sheldon, whose philosophy is rooted in letting the land lead. Guided by regenerative and biodynamic principles, the team farms with the health of the soil and ecosystem as their first priority — believing that truly expressive wine can only come from a truly healthy vineyard. Rather than defaulting to familiar varietals, Dylan has deliberately sought out cool-climate grapes from across Europe and beyond — Chenin Blanc, Kerner, Scheurebe, Rkatsiteli, Grüner Veltliner, Verdelho, and more — selecting each one for its ability to thrive in the Cowichan Valley's unique maritime terroir. The result is a cellar of wines that are vibrant, aromatic, and unmistakably of this place: crafted with minimal intervention, maximum curiosity, and an abiding respect for the island they call home.

A Sanctuary for Cool-Climate Varietals
The Cowichan Valley's mild winters and warm, dry summers create ideal conditions for the aromatic, expressive grape varieties at the heart of Cobble Hill's portfolio. Dylan Sheldon, a winemaker with deep roots in cool-climate viticulture, has assembled a remarkable and ever-growing collection of varietals — from the classic Pinot Gris and Pinot Noir to the adventurous Rkatsiteli, Grüner Veltliner, Zweigelt, Verdelho, Viognier, and Gewürztraminer. Over 3,000 new vines have been planted since the winery's founding in 2023, a testament to the team's long-term commitment to exploration and diversity
